Perspectivas agroindustriales actuales de los oligofructosacáridos (FOS). Los oligofructosacáridos representan una importante tendencia agroindustrial por sus aplicaciones técnicas, productivas y nutricionales. Este trabajo abordó los principales aspectos asociados con los oligofructosacáridos desde el punto de vista de sus características químicas, biosíntesis, métodos de análisis, fuentes vegetales y microbianas, métodos de obtención y aspectos nutricionales (rol como fibra dietética). Aplicaciones industriales prácticas de estos carbohidratos son también discutidas, entre ellas su capacidad como sustituto de la grasa, estabilizante y mejorador de textura.Downloads
