Abstract
The citric acid and ascorbic acid contents were measured in the ten most common citrus fruit varieties of Costa Rica. Comparison of results for both substances shows that the greatest amounts of ascorbic acid are found in oranges with low citric acid content, while the high citric acid varieties of lemons and oranges contain much less ascorbic arid. The local variety of tangerine is quite poor in both acids.Comments
